The last thing we took from our old house was the bananas growing on the tree out back. Of course, it was the first year we got usable bananas (we got them once before but we didn’t get them staked before the weight of them toppled the whole stalk over and they never ripened). Unfortunately, we’ve run out of time to wait for this bunch to ripen as our trip back to Dublin is right around the corner. Luckily, another friend posted pictures of her bananas as well and got a TON of great recipe ideas for using the green bananas!
I took one of the ideas and turned it into a fantastic breakfast for the family: Dairy Free Banana Oatmeal.
The ingredients are too simple:
- 10 small Green Bananas
- 1 1/2 cups Old Fashioned Oats
- 24 oz. Coconut Milk
- 2 tablespoons Sugar
Combine all ingredients in a pot, cook until bananas and oatmeal are tender. Done! A delicious and nutritious breakfast that the whole family enjoyed (though the kids did insist on sprinkles for theirs and didn’t love the bigger pieces of banana).
