We’re all settled into our new apartment (here’s what it’s like with 4 kids!) and while the space is working out for us overall, there’s one area that just isn’t cutting it: the kitchen.
I generally enjoy cooking for family and with so many of us, getting a good meal on the table can be quite a process. But in the smaller kitchen, I’ve been forced to stick with easier, less elaborate meal options.
Which made me think of this awesome ham and cheese savory bread pudding recipe that I haven’t made in a long time. It’s not the quickest meal but it’s not complicated and doesn’t require a lot of space or specialized equipment, even kids could make it!
Ham and Cheese Savory Bread Pudding Recipe
Ham and Cheese Savory Bread Pudding Ingredients:
- 1/2 loaf day-old Italian Bread, firm but not crumbly
- Dijon Mustard
- 12 ounces Ham or Canadian Bacon, cut into bite sized pieces
- 8 ounces Swiss Cheese, cut into bite sized pieces
- 6 Eggs
- 1 cup Milk
- Salt and Pepper to taste
How to prepare Ham and Cheese Savory Bread Pudding:
- Preheat oven to 350 degrees and grease a lasagna or rectangular cake pan.
- Slice bread, about 3/4 inch thick.
- Coat both sides of the bread slices with Dijon mustard.
- Cut bread slices into cubes.
- Mix together bread, ham and cheese cubes and place into backing dish.
- Whisk together eggs, milk, salt and pepper.
- Pour egg mixture over bread mixture and use a spatula to press bread down into liquid until all bread is coated and mostly immersed in egg mixture.
- Bake 45 minutes or until top bread pieces begin to brown.
The savory bread pudding combination of the melted cheese combined with the set eggs and Dijon mustard on the bread tastes like a warm ham and cheese sandwich but feels a little fancier and filling for dinner with a side of steamed vegetables or fresh salad.
